Nice to finally hear WHY to do stuff. Most recipes are like “use cold water” and it’s like ok, sure but why?

Suppose you've cubed the potato and are boiling for potato salad. Still use acid?

OK Chef so if I want to make roasted potatoes the right way and boil them for like 20 minutes so I get pork tender with a little bit of white vinegar. Then put them in the hot pan with the duck fat. Does that make sense?

My Grandmother lived at 9400 ft her whole life and stayed loyal to her wood and coal cookstove. She would boiled her potatoes with vinegar drain and refrigerated them over night. The next day she would braise her meat with other veggies to make her stew then add the potatoes last. She said the high altitude made it hard to boil them without them falling apart. I never understood the vinegar until now.

Look, I've been making potatos for 40 years just like my mother, and just like her mother, and just her mother. Here's how we all did it -> Pot of water, a little salt, heat, done.🤨

The first part is the same theory behind reverse sear with meat… bring it up slow instead of cooking the outside while the inside is not as cooked. 😉

I tried this tonight with baby goldens. Game changed. I don't know what I'll do with the info, but definitely works. Pro-tip, don't use apple cider vinegar. It will taste fine, but your kitchen will smell. 😂

Chef, is there a particular reason you use rice wine vinegar for something like this rather than white or apple cider vinegar? Does it change the taste?

Okay but if I'm making Julia Child's favorite leek and potato soup, then I want the potatoes to fall apart right?

"If you boil it, it will fall apart over time." Chopped potatoes only take 20 minutes. They don't dissolve in 20 minutes. I use potato boiling liquid for bread. Adding vinegar would ruin it for that purpose. I'll just boil them for 20 minutes.
