As a chef and someone who worked in kitchens for about 18 years can confirm this is superior. I would say its probably a bit less of a constant flip but the old idea of never touching the steak just doesnt work as well. The key really is utilizing all of the pan's heat.

I NEVER cook steaks on stove. GRILL ONLY. Traeger smoked and it makes better steaks than your high end restaurants.

Some one serious eats ;) Kenji outlined this method perfectly Check out gugas comparison for basting in butter too. He found no difference between basting the steak in the pan and just charring some butter separately and pouring over a resting steak

Alright since no one is telling you. I’ll do it - that steak does not have a good char at all. It’s missing the high heat needed.

interesting. i also cook steak in a pan but use butter/oil and thyme and flip less frequently but using the butter to help cook the steak. some people dont like to use butter & oil when cooking a steak. seen Gordon Ramsay do it on YouTube and tried it .

You can flip every 30 seconds or so Works best on thinner steaks
