Something I often see overlooked in carnivore diets … is the cross-reactivity between eggs 🥚 and rheumatoid arthritis impacting 30-35% of RA patients. Egg whites contain ovalbumin, ovotransferrin, and lysozyme, which are antigenic proteins. In susceptible individuals, these proteins can trigger molecular mimicry with joint tissue antigens.

Low carb high fat with fasting reduces inflammation levels and arthritis. Did for me anyway. It takes some time probably to reduce the insulin and insulin resistance in the body (at the mitochondrial level is my understanding) but then the body burns body fat by default. Quit spiking the insulin with carb snacking.

Dietary starch has been the single biggest source of flareups for my Ankylosing Spondylitis. Even sugar isn't as bad. Meat based keto or carnivore are consistently the safest diets. Dr. Alan Ebringer's research is still relevant in this area.
