I believe should read 1/2 cup plus 2tbsp of vinegar correct?

That's how I make ricotta but I use raw milk and lemon juice

@Trambakoulas2 ήρθε η ώρα να φτιάξεις τυρί. Εγώ με πυτιά έχω φτιάξει και με λεμόνι (2 διαφορετικές συνταγές είναι) αλλά θα δοκιμάσω και αυτήν.

I've been curious about making simple cheeses. Thank you for being so informative! I know plenty of local dairy Farmers nearby so I can get whole milk that's not been pasteurized get the most nutrition out of my cheese, right?

That’s not true. You damn sure can taste the vinegar. This is why I have used Rennet.
