Beefy Enchilada Stuffed Shells Ingredients: 1 box jumbo pasta shells 1 can red enchilada sauce 2 Ibs ground beef 1 can refried beans 2 cups Colby jack cheese 2 cups pepper jack cheese Optional: green onion and sour cream Directions: Boil and drain pasta. Let cool. Brown ground beef with taco seasoning. Drain. Add to large bowl. Add refried beans and 1 cup Colby jack and 1 cup pepper jack to the bowl with the meat. Mix together. Pour a little enchilada sauce into the bottom of a casserole dish. Stuff each pasta shell with meaty cheesy mixture and lay in the casserole dish on top of cause. A few people suggested I make a sardine salad with the sardines I'm not crazy about. I even added a can of albacore tuna and you know what? It's pretty good and it's oozing with Omega-3... about 3000 mg per batch. Tunadine salad 1 small can of sardine and tuna (mostly drained) 1/4 cup diced pickles 1/4 cup sour cream garlic powder and salt to taste. Mash up your fishes with a fork before combining all ingredients. Eat with pork rinds, celery, bacon or whatever you can imagine.
