My Dad was a “butcher,” as they were called in the 50s. He taught me to slice a patty with a bread knife, about 1/2” thick, then slightly form it. Ground sirloin, the best. 😉👍🏼

Toppings belong underneath the meat. That way your burger is assembled already when the meat is finished, and you get a nice hot burger. In-N-out has mastered this.

Good information. I've started brushing the patties with tamari sauce and grinding Montreal seasoning from an electric pepper mill on the patties. It's a great seasoning but too coarse for me.

The divot also serves as a nice receptacle for the Worcestershire sauce when seasoning the patties.

Do you use a little baking soda for browning if mixing a patties with egg & Worcestershire sauce, with parsley & a little garlic salt?

I saw advice to mix in a quarter tsp of baking soda + 3 tbsp of water per pound of ground beef. Legit?

Booches, a 142-year-old college town burger joint in Columbia, Mo., is the first place I ever heard about putting the divot in the center of the pattie.

I was today years old when I learned I've been browning ground beef wrong and today, I learned I've been man handling my beef burgers into submission (I thought, anyways). Thanks for the tips!

Will try this next time I make burgers. I had to find a new beef supplier and their meat all come frozen. Is there a right way / wrong way to thaw ground beef?
