My Dad was a “butcher,” as they were called in the 50s. He taught me to slice a patty with a bread knife, about 1/2” thick, then slightly form it. Ground sirloin, the best. 😉👍🏼

Toppings belong underneath the meat. That way your burger is assembled already when the meat is finished, and you get a nice hot burger. In-N-out has mastered this.

Good information. I've started brushing the patties with tamari sauce and grinding Montreal seasoning from an electric pepper mill on the patties. It's a great seasoning but too coarse for me.
