Check out this recipe of Black Carrot Delight from Rajinder Sethi 🌟Ingredients: 1 cup grated black carrots 1 cup rice 1 cup jaggery (or as per taste) 4 cups milk 2 tablespoons ghee (clarified butter) 1/4 cup cashews and raisins (for garnish) 2 tsp honey 2 tsp Rose water Pinch of salt Cardamom powder for flavor 4 Phyllo sheets 5-6 Strawberries for decoration 🌟Instructions:  Wash and soak rice for 30 minutes. Cook the rice until it's soft and set aside. In a pan, heat ghee and sauté the grated black carrots until they are cooked and soft. Add cooked rice to the carrots and mix well. In a separate pot, heat milk and jaggery. Stir continuously until the jaggery dissolves and the milk thickens slightly. Add the carrot-rice mixture to the milk and let it simmer for 10-15 minutes on low heat, stirring occasionally. Add cardamom powder , rose water honey & salt In another pan, roast cashews and raisins in ghee until golden brown. Cut phyllo sheets into 5×5 inche, keep sheets on each other applying butter. Grease a bowl and keep all the sheets in it giving the shape of bowl Bake for 8 to 10 minutes in a preheated oven. Fill these baskets with Carrot Delight & Garnish it with the strawberries,roasted cashews and raisins.
