1 slab of pork belly (1-1.5lbs) 1 tosp rock sugar* Seasoning: 1 tbsp dark soy sauce 1 tbsp light soy sauce 4-5 tbsp shaoxing wine Water to cover pork belly to let it boil you can substitute rock sugar with granulated or brown sugar

Steps Cut pork belly into 1-inch cubes Stir fry rock sugar until caramelized (a nice reddish brown) Coat pork belly in caramel Add seasoning Top off with water until it covers all the pork Let the pork belly boil to soften the meat and for the sauce to reduce

This is a good recipe to prepare when I have guests over. However, this is a sped up version where the "braising" of the pork belly only took 20 minutes? The meat did end up being slightly tougher than usual (it usually MELTS in your mouth) so definitely have it boiling and reducing for at least 30-45 minutes for that texture. The entire process of preparing the ingredients before throwing them all into the pot took less than 30 minutes! Super fast Enjoy
