Every recipe on the internet: Fry the onions until browned. About 5 minutes. Grinds my gears

Here's your treat but there's no trick.

I tried to make my mom’s bean soup. One of the main flavors was the caramelized onions. I could never get it right. I watched her make it and she stood over the onions for at least 20 min. Then I got it.

Finally, I found out what I've been doing wrong. No salt and trying to cook them too fast. Thank you!

I'm not sure why, brain short circuit or something... but "lessons in caramelizing onion" morphed into "lessons in how not to be seen." IYKYK.

My late former mother in law could cook onions down to jelly. Really good with the liver as I used the onions as gravy. My former brother in law really loved her liver, now I need to call him and wish him and his wife HAPPY NEW YEAR!!!

When I make In & Out animal style burgers at home, it takes me 45+ minutes to make just the onions. I usually make them ahead of time. I always wondered if I was doing it well, but inefficiently... constantly deglazing the pan with water to prevent the onions from burning. Oil to start, but butter added after the initial step. They do end up very sweet, almost a jam.

I didn't salt mine yesterday (for quiche) but a slow cook in the bacon fat caramelized them beautifully.

Learned this from a girl i was seeing who went to culinary school. Glad to see you and her (and so me) have the same process.
