Do the geometry nodes variables come over with it or you need to build a shader. What part of geo nodes comes over, is it just the procedural mesh?

You need to build a shader. With geo nodes you can write data at any point along the graph into spare channels. Your custom shader can then read and use these for additional procedural effects (animations, masking).
