Ingredients For crown roast, 10 pound pork loin ribs 4 tbsp salt 3 tosp pepper 2 tbsp sugar 3 tbsp extra virgin olive oil 1/4 cup melted unsalted butter 1/4 cup fine fresh herbs (rosemary, thyme, sage) 5 Whole garlic 1 fennel a handful mini onion a handful mini potato a handful carrot For cranberry garnish, 1 cup red wine 1 cup cranberry few stem rosemary and thyme

Cooking process Preheat oven to 350 F (176 C). Remove the fascia from the meat and remove moisture with a kitchen towel. Leaning against the bone, make a cut at a certain depth in the same direction as the bone, season with salt, pepper, and sugar then coat with olive oil. Tie the bottom and top with thread to make a crown shape. Finely chop rosemary, thyme and sage then add them to melted butter to make herb butter and apply. Bake in the oven at 350F (176C) for an hour and a half. Cut fennel, onion, potato and carrot into small pieces, season with salt and pepper, add remaining herb butter then mix them. Prepare dried cranberries, red wine and herbs in a bowl.

Take the meat out of the oven for a while and add the vegetables. Bake for another 25 minutes to allow the vegetables to cook. Check with a thermometer to see if the internal temperature of the meat is above 150F (65 degrees), seal it with foil, and let it rest for a while. Put the prepared cranberries in the pot where the meat was cooked, boil them down, and take out only the cranberries. Slice the resting meat and plate it with vegetables and cranberry garnish Bon appétit!
