Walmart is replacing physical price stickers with electronic labels in thousands of stores — giving them the ability to change prices every 10 seconds. Supermarket Guru CEO says on a hot summer day if you want ice cream or lemonade, they can raise the price instantly.

These things sound very expensive and like they could break easily

If the price can change between picking up an item and checkout, they're going to be slammed so hard on false advertising charges that it'll make their shareholders' heads spin.

I see a product on the shelf for $1, then when I make it to the cashier it's $1.50? That's illegal. Bait and switch.

And what they are not telling you is that these "electronic tags" are also easily knocked down, prone to catching on fire and, think about it, the more "electronic" they become, the more susceptible they are to hacks.
